Playgroup Granola Bars

I love granola bars–especially the ones with chocolate chips. My AllRecipes.com email gave me this recipe last week, and I tested them this afternoon. I am a fan. If you like granola bars (the not-exactly-healthy-kind), try these. Oh, and Ana and Mags are both fans.

Playgroup Granola Bars
Ingredients:
2 cups rolled oats
3/4 c packed brown sugar
1/2 cup wheat germ (I crushed up Bran Flakes)
3/4 tsp ground cinnamon
1 cup flour
3/4 cup raisins (optional)–I used chocolate chips
3/4 tsp salt
1/2 cup honey
1 egg, beaten
1/2 cup vegetable oil
2 tsp vanilla extract

1. Preheat oven to 350 F (175 C). Grease a 9×13 inch baking pan.
2. In a large bowl, mix first 7 ingredients. Make a well in center, and pour the remainder of ingredients in. Mix well using your hands. Pat the mixture evenly into the prepared pan.
3. Bake for 30-35 minutes (20-25 minutes in my altitude or oven) until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut the bars while still warm. Do not allow the bars to cool completely before cutting, or they will turn out to hard to cut.

After cutting them I thought they tasted pretty close to an oatmeal cookie. But with time they harden and are like, guess what? A granola bar!
